The Commissary

The Commissary, the region’s first kitchen incubator and only shared kitchen permitted in Monroe County, is a social entrepreneurship enterprise aimed at facilitating the creation of new food business ownership opportunities and encouraging food business owners to legitimize and accelerate their concepts. The Commissary will provide equipment and support for caterers, bakers, food truck operators, pre-startup restaurateurs, home-based food businesses looking to legalize, and small-scale packaged food manufacturers.

The Commissary will offer flexible and affordable commercial kitchen space that can be rented by the hour, providing 14 kitchen stations and a 40-foot line of commercial grade equipment.  Cold and dry food storage space will also be available.  A performance kitchen will act as a space for pop-up restaurants, food events, and cooking classes.

Members of The Commissary will have access to food industry-specific incubation support aimed at decreasing risk and increasing growth potential, as well as opportunities for enhanced visibility by participating in food-centric events.

To be located on the first floor of Sibley Square, construction starts in October 2019, with completion anticipated by April 2020.
